PDO
The European label that ties a food's name to one place, where every stage of making must happen.
Also: Protected Designation of Origin, AOP, DOP, g.U.
A Protected Designation of Origin is the strongest of the European Union's food name labels, created in 1992. A PDO cheese must be produced, processed and prepared in a defined area, following a specification registered with the European Commission that usually sets the breed, feed, milk treatment, method and minimum age. The name is then protected throughout the Union and in countries with trade agreements. More than two hundred cheeses hold it, including Parmigiano Reggiano, Roquefort, Feta, Stilton, Manchego and Comté. It is written AOP in French, DOP in Italian, Spanish and Portuguese, and g.U. in German. India has its own Geographical Indication scheme, which has registered foods such as rasagola.
