About EveryCheese
EveryCheese is a free guide to the cheeses of the world, from every country and every dairy, with India as one strong thread among many. It has pages on 367 cheeses so far, 72 cheese dishes and 254 more cheeses on the list to be written. A cheese is understood best next to its milk, its valley, the dishes it goes into and the days it is eaten, so that is how the guide is built.
The aim is simple: anyone should be able to look up any cheese and come away knowing what it is, which milk it comes from, how it is made and aged, how it tastes, how it is eaten at each meal, what it means in faith and celebration, and how to buy, keep and serve it.
How it is arranged
Every cheese is filed by region, country and, where the sources allow, by cheese town, market, cave or pasture; by style (fresh, brined, stretched, bloomy, washed, Alpine, hard, blue and more); by milk; by flavour; by meal and use; by faith and tradition and by celebration. Cheese dishes are drawn as rings of their ingredients and made step by step, the calendar ties cheeses to the days that call for them, and the concepts explain the words.
Pictures and drawings
Photos come from Wikimedia Commons under free licences, each credited beside it. Every cheese page also carries drawings made by EveryCheese from what the page itself says: its shape in its paste and rind colours, an age meter from fresh to extra-aged, its milk, and a ring chart for dishes. The drawings are diagrams of a kind of cheese. They are not portraits of one wheel. No image on EveryCheese is made by an AI image generator.
What is live
Cheese today is rebuilt every day from the calendar: which markets, fairs, feasts and fasts are on, what is coming, cheeses by meal for the hour you are reading, and a cheese of the day. New cheese pages are written every day, the news wire is checked every few hours, and every page is re-read against its sources over time.
How a page is made
Names and facts come from Wikidata and Wikipedia. The text is written afresh with AI assistance from those sources only: the facts are kept, the wording is ours. Every page is then compared with its source article, and a page that repeats a run of the article's words is rewritten or held back. Each page names its source and links to it and to its licence. A page is published only if it has enough to say; anything that falls short waits for a person to review it.
What EveryCheese is not
It is not a shop and it does not sell cheese. It is not dietary or medical advice: anyone with an allergy, an intolerance or a pregnancy should ask a doctor about raw-milk and soft cheeses. It is not the last word on any cheese: makers, families and valleys differ, and the people who make and eat a cheese know it best.
Care
Cheese is bound up with identity, faith and livelihood, and many cheeses and dishes are claimed by more than one country or town. EveryCheese lists a cheese under every country it belongs to and reports disputed origins as disputed. Protected names are reported as the law sets them, and imitations are named as such. If a page about your food or your faith is wrong, write to us and we will fix it.
Who is behind it
EveryCheese is published by ClearTrust, a company that measures traffic quality for the advertising industry. ClearTrust pays for EveryCheese and keeps it free. EveryCheese is part of the ClearTrust IVT-Free Publication Network. IVT stands for invalid traffic: visits from bots and other fakes, which the network's sites are screened for. Editorial decisions are not for sale: sponsored placements are always labelled.
