Slow Food Presidia
Projects run by the Slow Food movement to protect endangered traditional foods, many of them cheeses.
Also: presidium, presìdi, Ark of Taste
Slow Food, the movement founded in Italy in 1986, runs presidia, singular presidium, to protect traditional foods at risk of disappearing. A presidium brings producers together around a shared method, often stricter than any legal rule, and helps them with markets and promotion. Many are cheeses: the historic Bitto of Valtellina, Somerset artisan cheddar, raw-milk Robiola di Roccaverano, Pecorino di Farindola, Bra d'alpeggio and dozens of mountain and pastoral cheeses worldwide, including in Asia, Africa and Latin America. A sister project, the Ark of Taste, lists foods in danger around the world without organising producers.
