Farmhouse cheese
Cheese made on the farm where the animals are kept, from that farm's own milk.
Also: farmstead cheese, farm cheese
Farmhouse cheese, called farmstead cheese in North America, is made on the same farm where the milking animals live, using only that farm's milk. This means the cheesemaker controls everything from the grazing and the breed to the milking and the making, and the cheese can vary with the seasons and the weather. In Britain, farmhouse cheddar and Lancashire carry the term as a sign of quality, and in France the same idea is called fermier. Farmhouse cheeses are often, though not always, made with raw milk and in small quantities. In India, many Kodaikanal, Ooty and Himalayan cheesemakers now describe their cheese as farmhouse.
