TSG
The European label for a food made by a traditional recipe or method, wherever it is produced.
Also: Traditional Speciality Guaranteed, STG
A Traditional Speciality Guaranteed is a European Union label that protects a recipe or method rather than a place. A TSG food can be made anywhere, so long as it follows the registered traditional specification. Few cheeses carry it, but those that do are notable: mozzarella, as Mozzarella STG, guarantees a traditional pasta filata method and is different from the place-protected Mozzarella di Bufala Campana; and hay milk, Heumilch, from cows, sheep or goats fed without silage, is a TSG used on many Austrian and Alpine cheeses. The Italian and Spanish form of the abbreviation is STG.
