Ost
The Scandinavian word for cheese, as in brunost, brown cheese, and ostehøvel, cheese plane.
Also: ostehøvel, brunost, hvit ost
Ost is the word for cheese in Norwegian, Swedish and Danish, and it forms the base of the Nordic cheese vocabulary. Hvit ost, white cheese, means ordinary yellow-rind cheese such as Norvegia or Jarlsberg in Norway; brunost, brown cheese, is the caramelised whey cheese also called mysost or, if made with goat milk, geitost; gammelost, old cheese, is a sharp, mould-ripened sour-milk cheese of western Norway. In Sweden, Västerbotten and Herrgård are household names, and in Denmark, Danbo and Danablu. Cheese is eaten thinly sliced on bread and crispbread at breakfast and lunch, taken with an ostehøvel, the cheese plane invented in Norway.
