Käse, from Latin caseus, is German for cheese, and Germany, Austria and Switzerland build many names from it. Bergkäse is mountain cheese, Weichkäse soft cheese, Schnittkäse sliceable cheese, Hartkäse hard cheese, Frischkäse fresh cheese, Sauermilchkäse sour-milk cheese such as Handkäse and Harzer. A Käserei is a cheese dairy, and a Sennerei a mountain dairy run by a Senn, a cheesemaker on the Alpine pasture. German has its own ways of eating cheese too: Käsespätzle, egg noodles layered with mountain cheese and onions; Obatzda, a Bavarian spread of ripe soft cheese and butter; and Käsekuchen, the German cheesecake made with quark.
