Cheeses of Goosnargh and the Fylde

Farmland north of Preston where farmhouse Lancashire cheese is made by mixing curds from different days.

Made, aged and sold here

Lancashire cheese

Best time: April to October.

Goosnargh is a village in the green farmland north of Preston, below the Forest of Bowland. The farms around it, and around neighbouring villages such as Inglewhite, Chipping and Longridge, are the home of farmhouse Lancashire cheese. Small farms with their own herds once made it everywhere here, and a few families still make it in the traditional way.

Lancashire cheese

Traditional Lancashire is made by mixing curd from two or three different days, which gives a loose, buttery, crumbly texture. Creamy Lancashire is young, soft and mild, and Tasty Lancashire is aged for longer and sharper. Crumbly Lancashire, a quicker modern style, is drier and more acidic. It melts well, which makes it the classic cheese for toasting on bread.

The countryside

The farms lie between the Fylde coast and the fells of the Forest of Bowland, an area of outstanding natural beauty. Beacon Fell, a small hill above the farms, has walking trails and views over the plain. Chipping, a stone village at the foot of the fells, has old pubs and a cheese dairy among its farms.
