Korbáčik

A Slovak string cheese pulled into thin strands and plaited, sold plain or smoked.

A braid: stretched curd pulled into strands and plaited or wound. Armenian chechil and Mexican Oaxaca cheese.

Also: korbáčiky, Oravský korbáčik, Slovak string cheese

Korbáčik, little whip in Slovak, is a string cheese from the Orava region of northern Slovakia. Steamed or pasta filata curd, from sheep or cow milk, is pulled by hand into thin strands which are then braided into short plaits that look like the end of a whip. They are lightly salted in brine and sold fresh or smoked to a golden brown, often in bundles at markets and roadside stalls in the mountains. Korbáčiky are chewy, salty and mild, and are eaten as a snack with beer. Oravský korbáčik is protected in the European Union as a PGI. Relatives include the Armenian chechil and the Slovak parenica.
