Truckle
A tall cylindrical cheese, especially a clothbound cheddar, taller than it is wide or about as tall.
Also: cheddar truckle, drum
Truckle is a British word for a cylinder-shaped cheese, most often a cheddar, Stilton or other territorial cheese made in a tall round mould rather than as a flat wheel or block. Traditional farmhouse cheddar comes in large truckles of around twenty-five kilograms, bound in cloth and lard, while small truckles of one to two kilograms, often waxed, are popular as Christmas gifts. A truckle loses moisture through its sides and rind more slowly than a thin wheel, which suits long ageing. The word comes from an old word for a small wheel or pulley. Stilton is usually cut across the top of its truckle.
