Also: ટોપલી નું પનીર, Parsi paneer, topli paneer
Topli nu paneer is a cheese of the Parsi community of Gujarat and Mumbai, and topli means small basket in Gujarati. Whole milk is set with rennet, and the soft curd is ladled into tiny cane or plastic baskets to drain, which gives each little cheese a woven pattern on its surface. The cheeses are sold floating in their whey, are mild, slightly salty and as soft as fresh mozzarella, and are eaten within a day or so. They are a fixture of the lagan nu bhonu, the Parsi wedding feast, and of navjote celebrations, and are sold by a few dairies in Mumbai's Parsi neighbourhoods. With Surti paneer, it is one of India's few rennet-set cheeses.
