Rindless
Cheese ripened sealed in plastic film or foil, so it forms no rind at all.
Also: block cheese, film-ripened, foil-ripened
A rindless cheese is made in a block or wheel, then sealed in airtight plastic film or vacuum bags and stored to ripen without contact with air. No rind forms, there is no loss of weight through drying, and the cheese can be cut into neat portions with no waste, which is why most supermarket cheddar, Gouda-type and Emmental-type cheeses are made this way. The flavour is usually cleaner and milder than in a cheese of the same age with a natural or clothbound rind, since no surface moulds work on it. Rindless cheese ripened in plastic is the norm in industrial dairies around the world, and most cheese made in India is rindless.
