Queso
The Spanish word for cheese, and in Mexico and the United States often a melted cheese dip.
Also: quesos, queso fresco, queso blanco
Queso is cheese in Spanish, from Latin caseus. Spain's own cheeses include Manchego, Idiazabal, Mahón, Cabrales, Tetilla and Torta del Casar. In Latin America the everyday cheeses are mostly fresh: queso fresco, crumbly and mild, made with rennet; queso blanco, set with acid like paneer so it holds its shape when fried; queso panela, moulded in baskets; cotija, aged and salty, crumbled over beans and tacos; and quesillo, stretched and wound. In Texas and much of the United States, queso has come to mean a dip of melted cheese with chillies. Spanish also gives requesón, a whey cheese, and cuajada, a curd dessert or fresh cheese.
