Imeruli
Georgia's everyday fresh white cheese from Imereti, the essential filling of khachapuri.
Also: იმერული ყველი, Imeretian cheese, Imeruli kveli
Imeruli kveli, cheese from the western region of Imereti, is the most common cheese in Georgia. It is made from cow milk set with rennet, the curd lifted out, drained and lightly pressed, then salted or kept a short time in mild brine. It is white, moist, slightly sour and gently salty, and it is eaten within days. Imeruli melts smoothly, which makes it the classic filling for khachapuri, the cheese breads of Georgia, often mixed with sulguni for stretch. It is also eaten with bread, herbs and tomatoes at breakfast and on every supra table. When imeruli is stretched in hot water and shaped, it becomes sulguni.
