Cheesemonger
A shopkeeper who selects, cares for and sells cheese, often cutting it to order.
Also: fromager, cheese shop, formaggiaio
A cheesemonger sells cheese, but at their best they also choose it from makers, look after it in the shop and advise on what is ripe today. Many keep cool rooms where they finish cheeses, effectively working as affineurs, and taste wheels with a cheese iron to decide what to cut next. Cutting to order rather than pre-packing lets the customer taste first and lets cheese breathe. A good monger will ask what the cheese is for, a board, cooking or a gift, and suggest something in good condition rather than simply the most famous name. The French fromager and the Italian formaggiaio are the same trade.
