Cheese knife
Any of the knives shaped for cutting cheeses of different textures, from soft Brie to hard grana.
Also: cheese knives, Parmesan knife, soft cheese knife
Cheese knives are shaped to suit the cheese. A soft-cheese knife has a thin blade with holes in it so a sticky paste does not cling, and is often forked at the tip to lift slices. A short, stubby almond-shaped knife is used to break hard grana cheeses along their natural grain rather than slice them. Chisels or spades with a flat blade cut semi-hard cheeses and crumble blues. Cleavers and double-handled knives cut through large hard wheels, and wires cut soft blocks cleanly. At the table, each cheese should have its own knife so that a blue does not flavour a goat cheese. Thin slices of firm Scandinavian cheese are taken with a cheese plane.
